sphalerite: I'm mostly trying to minimize how much is written to the SD card as that's probably the slowest part. I thought that conv=sparse would just skip the empty bits, but maybe it didn't seek and just removed them or something.

It really shouldn't matter, because the image I'm creating has full partition table, fresh file systems, fresh cryptsetup luksFormat … all the bits that are interesting should be overwritten.

Guess I'll go with a script that auto grows on first boot instead and make the image about as big as it needs to be.

The nixos sd-image.nix also does it. But I'm not using that because I can't really adapt it for / on LVM on LUKS - easier to grab a few bits. :)
