caveat: sometimes things could work on more platforms than they're packaged for but nobody put in the work to make it do so yet

the important point to consider is that there is no subset or special casing, it just goes through all of Nixpkgs and tries to build it all

personally i have a few packages that are even designed in a way to make it easy to add macos support but...my macos died and i haven't fixed it yet
