a pattern they're happy with for dealing with stuff like /etc/hosts and to some degree with /etc/shells

I'm thinking of updating my bootstrap script to just move hosts & shells out of the way before the first nix-darwin run, but I saw some previous notes, I think it was in IRC, about macos not wanting to recognize the linked copies anyways
