Quick question from a total noob: at the top of my `darwin-configuration.nix ` file I see `{ config, pkgs, ... }` does `pkgs` here refer to a specific channel? If so, how do I determine which channel it refers to? If not, what is it a reference to?

it's a function argument, so what it refers to depends on how you run it. If you use darwin-rebuild, I believe it will use <nixpkgs>, which you can think of as referring to your "nixpkgs" channel
